A Taste of Rolla: The Chancellor's Table
This two volume set contains a rich collection of both recipes contributed by the campus community and historical commentary. Both volumes were assembled by Dorcas Parks, wife of John Parks who served as chancellor from 1992 to 2000.
Mrs. Parks conceived of the idea of a recipe book as a fund raisers to purchase furniture for the chancellor’s residence. Funds from the sale of the first volume went to the purchase of a cherry dining table seating 22 and a china cabinet. Funds from the second volume were used to purchase additional furniture for the residence.

John and I have the unique opportunity to live in this wonderful memory-filled home built in 1889 called the Chancellor's Residence. We want to thank FOR and those who purchase this book as well as those who contributed the recipes to make this book possible. We hope you enjoy it. The proceeds from our first The Chancellor's Table enabled us to purchase a beautiful solid cherry dining table that will expand to seat 22, a lovely matching china cabinet to display some of the beautiful heirloom gifts that friends and alumni have given to the Residence, a matching expanding serving cabinet, and matching chairs. We use them very often and thank you for helping us with this beautiful purchase that will be in the Residence for years to come. The proceeds from this Vol. II of The Chancellor's Table will be used to provide needed furnishings for the Residence without taking funds from the University budget. This frees University funds to be used for student support and academic programs. We believe so strongly that the University is actively moving forward in developing tomorrow's leaders and want to make the best use of our funds. A group of friends of UMR and in particular, friends of this house, have united in this project. It is our hope that the profit from this book will provide the residence with a new dining table and chairs. We have appropriately named our cookbook The Chancellor's Table. It has been exciting, rewarding and just fun to work together. The response to our request for recipes has been overwhelming! In fact we received so many that we have saved some for use at a later time, perhaps another cookbook. One night John came home and found me typing recipes at six o'clock and suggested that at that hour, perhaps recipes were intended to be cooked! Juanita and I took that as a hint a·nd did try many of them. John agreed with us that not only did the recipes sound good to read and type, they were delicious! We didn't get to test all the recipes, but we rest assured that everyone sent us a well-tested family favorite. Thank you for sharing with us! Our deepest appreciation and thanks go to all our contributors. If you were unaware of this project, we ask your forgiveness and assure you that your participation is wanted and hope you will share a recipe with us next time. It has been a joy to read notes from the contributors and relive with them their association with MSM-UMR.
